Cooking with Olivia: Seafood Cornbread Stuffing

WEST MONROE, La. - Here is what you need to make Olivia's seafood cornbread stuffing!


1 (8.5 oz) Box of cornbread mix

**Make sure you buy ingredients for cornbread**

1 yellow onion

1 green bell pepper

1 red bell pepper

1 stick of celery

1 bunch of green onion

2 cloves of garlic

1/2 stick of butter 

1 (10.5oz) can of cream of mushroom soup

1 1/4 cup of water

1/2 lb of chopped shrimp

1/2 lb of lump crab meat

1 teaspoon Cajun or Creole seasoning

6 cut up slices of pepper jack cheese



Prepare the packaged cornbread according to directions and bake.

Cut up vegetables. Melt ½ stick of butter in a pan and sauté vegetables until wilted.

Preheat oven to 350 degrees.

Prepare crab meat and chopped shrimp.

Add cream of mushroom soup to sautéed vegetables in the pan.

Add 1 ¼ cup of water to soup and vegetable mixture.

Add shrimp and crab meat to mixture on stove top.

Mix it up good and add 1 teaspoon of Cajun seasoning.

Take the cornbread and crumble it in the mixture. Mix well.

Add 6 slices of pepper jack cheese. Mix well.

Put mixture in greased baking pan and bake for 35 to 40 minutes at 350 degrees.
